Chocolate Chip Mug Cookie

In this week’s episode of Extreme Kitchens, I am cooking myself a whole dinner in the microwave of a hotel room! Who needs to order food from a restaurant when you can make Mac & Cheese and a Mug Cookie in the microwave?!? 😂 Obviously, you can also whip these up in your home microwave for a fun project and no-mess dinner. If I can make this whole dinner in a gross hotel room, then you can make them at home no matter how unconventional your kitchen is!

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • 1 tablespoon white sugar
  • 1 egg yolk
  • 1/8 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • Pinch of baking soda
  • Pinch of salt
  • 2 tablespoons chocolate chips

Instructions

  1. Place the butter in a large mug and melt in the microwave for 20 seconds. Add in the brown sugar, white sugar, egg yolk, and vanilla extract. Mix until fully combined. Add in the flour, baking soda, and salt. Mix until fully combined.
  2. Microwave for 1 minute then serve immediately.

Microwave Mac & Cheese

Ingredients

  • ¼ cup elbow macaroni
  • ½ cup water, divided
  • ½ cup cheese (I used half cheddar and half mozzarella.)
  • 2 tablespoons milk
  • 1 tablespoon butter

Instructions

  1. Add the elbow macaroni and ¼ cup of the water into a large mug. Microwave for 3 minutes, stir then add in another ¼ cup of water and microwave for another 3 minutes. Add in the cheese, milk, and butter. Microwave for 1 minute, stir, then microwave for another minute. Serve immediately.

Believe it or not, you can take the liquid from a Believe it or not, you can take the liquid from a can of chickpeas and turn it into a delicious, rich, silky-smooth chocolate mousse. That is exactly what I am doing in my brand new video on YouTube.com/EITAN! (LINK IN BIO) It only takes two other simple ingredients that you probably already have in your pantry: chocolate and sugar.

The liquid from a can of chickpeas is called aquafaba, and it’s nothing more than the water the beans are boiled in before they’re canned. The chickpeas infuse that water with properties that are very similar to egg whites, and it’s a great substitution for eggs in desserts and baked goods especially. This mousse is so luscious and creamy, you would never believe that it started as a can of beans!
