Sesame Schnitzel Topped With Loaded Salad

WHAT YOU’LL NEED
 

For the Harissa Schnitzel:

  • 4 large boneless skinless chicken breasts
  • 1 cup all purpose flour
  • 2 teaspoons smoked hungarian paprika divided
  • 2 teaspoosn turmeric divided
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 4 eggs
  • 1 tablespoon harissa
  • 1 cup panko breadcrumbs
  • 1 cup regular breadcrumbs
  • ¼ cup sesame seeds
  • Vegetable oil for frying

For the Salad:

  • 2 heads green little gems
  • 2 purple belgian endives
  • 2 yellow belgian endives
  • 2 Radicchio Variegata di Chioggia
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 cup fresh parcely leaves
  • 2 baby cucumber haved into long strips
  • 1 red chili thinly sliced
  • ½ red onion thinly sliced

For the Heirloom Tomato Vinaigrette:

  • ½ medium red hairloom tomato grated
  • 2 teaspoons Dijon mustard
  • cup extra virgin olive oil
  • ½ lemon juice
  • 1 tablespoon red wine vinegar
  • Kosher salt to taste
  • Frehsly cracked peper to taste
