Watermelon Feta Arugula Salad

I’ve recently been eating lots more salad than usual, and this Watermelon Feta Arugula Salad is my absolute favorite! Not only is it jam-packed with flavor and texture, but it’s also ridiculously easy to make. I love the contrast of the sweet watermelon, peppery arugula, and tangy dressing. There are a few keys ingredients that take this salad to the next level. Using both the juice and zest of the citrus, chop up the walnuts into the dressing to make sure it doesn’t all fall to the bottom, and crumbling the feta adds an extra texture to the mix!

Watermelon Feta Arugula Salad

WHAT YOU'LL NEED
 

  • 2 tablespoons lemon juice
  • 2 tablespoons orange juice
  • 1 teaspoon lemon zest
  • 1 teaspoon orange zest
  • 2 tablespoons balsamic vinegar
  • 3 teaspoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoon walnuts chopped
  • 5 cups watermelon cubes 1 inch cubes
  • 3 cups baby arugula
  • ¼ cup feta crumbled

Instructions
 

  • In a large bowl stir together the lemon juice, orange juice, lemon zest, orange zest, balsamic vinegar, olive oil, salt, pepper, and chopped walnuts. Add in the watermelon cubes, baby arugula, and crumbled feta. Toss to coat in the dressing. Serve immediately.
