Thick Peanut Butter Hot Chocolate

We’re currently deep into winter here on the east coast and man it’s cold! The perfect thing on a freezing night is a roaring fire in the fireplace and a hot drink in hand. This Thick Peanut Butter Hot Chocolate is the ultimate drink for just that. Made with semisweet chocolate, whole milk, peanut butter, and more, it’s far from your average powdered hot chocolate.
I’ve found that using semisweet chocolate results in the perfect balance of sweet and intense chocolaty flavor. But feel free to use whatever chocolate you have on hand. I topped it all off with some homemade whipped cream and chopped peanuts. You can also top it with marshmallows or even more chocolate, because why not!?

Ingredients

  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 1 cup semisweet chocolate chips
  • 2 tablespoons peanut butter
  • ½ cup whipped cream
  • ¼ cup peanuts, chopped

Instructions

  1. In a small saucepan, heat up the whole milk and heavy cream until it’s almost boiling. Remove it from the heat and add the chocolate chips and peanut butter. After 2 minutes, whisk the mixture together until completely combined. Simmer on a low flame, stirring continuously, for 10 minutes until the mixture is thickened slightly. Pour into two large mugs and top with whipped cream and chopped peanuts.

Believe it or not, you can take the liquid from a Believe it or not, you can take the liquid from a can of chickpeas and turn it into a delicious, rich, silky-smooth chocolate mousse. That is exactly what I am doing in my brand new video on YouTube.com/EITAN! (LINK IN BIO) It only takes two other simple ingredients that you probably already have in your pantry: chocolate and sugar.

The liquid from a can of chickpeas is called aquafaba, and it’s nothing more than the water the beans are boiled in before they’re canned. The chickpeas infuse that water with properties that are very similar to egg whites, and it’s a great substitution for eggs in desserts and baked goods especially. This mousse is so luscious and creamy, you would never believe that it started as a can of beans!
