Soft Scrambled Eggs On Toast

A few months ago, I tried soft scrambled eggs for the first time, and I am OBSESSED! I know what you are thinking. “Is EItan ReAlLy SHowiNg uS hOw To mAkE EgGs?!” And YES I AM! 😂 Go watch the video, try it for yourself, and get back to me! I’ve been living under a rock my whole life from this egg cooking method, and couldn’t let any of you do the same any longer!

Soft Scrambled Eggs On Toast


  • 4 whole eggs
  • 2 tablespoons butter
  • Kosher salt to taste
  • ½ inch slice of sourdough bread toasted
  • Flakey sea salt to taste
  • Freshly ground black pepper to taste
  • Red pepper flakes to taste
  • Chives thinly sliced


  • Crack the eggs into a medium-sized bowl along with the kosher salt. Using a whisk whip the eggs until completely combined and pale yellow in color.
  • Melt the butter in a small nonstick frying pan on medium-low heat. Add in the eggs and cook, stirring continuously until small curds form, and the eggs are moist and just barely set.
  • Spoon the eggs over the toast then top with flakey sea salt, freshly ground black pepper, red pepper flakes, and chives. Serve immediately.
