Why walk to the kitchen when you just just jump out of bed and cook on your desk!? 😂 These Chocolate Chip Pancakes are so ridiculously easy to make and are a super delicious breakfast. If I can make these pancakes in a my bedroom, then you can make them at home no matter how unconventional your kitchen is!

Easy Chocolate Chip Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar, optional
  • ½ cup chocolate chips
  • 2 eggs
  • 1 ½ cups milk
  • 3 tablespoons melted butter, plus more for cooking
  • Whipped cream (optional)
  • Maple syrup (optional)

Instructions

  1. In a large bowl, mix the all-purpose flour, baking powder, salt, sugar, and chocolate chips. Whisk together the eggs, milk, and butter in a small bowl. Pour the wet mixture into the dry ingredients and mix with a whisk until fully combined.
  2. Heat a buttered griddle or frying pan over medium heat. Pour or soup the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook on the first side until bubbles appear on the surface, the edges begin to look dry, and the bottoms are golden-brown, about 3 minutes.
  3. Flip the pancakes. Cook until the second sides are golden-brown, 2-3 minutes. Transfer to a plate and repeat using the remaining batter.
  4. Top with whipped cream or maple syrup and serve immediately.

Believe it or not, you can take the liquid from a Believe it or not, you can take the liquid from a can of chickpeas and turn it into a delicious, rich, silky-smooth chocolate mousse. That is exactly what I am doing in my brand new video on YouTube.com/EITAN! (LINK IN BIO) It only takes two other simple ingredients that you probably already have in your pantry: chocolate and sugar.

The liquid from a can of chickpeas is called aquafaba, and it’s nothing more than the water the beans are boiled in before they’re canned. The chickpeas infuse that water with properties that are very similar to egg whites, and it’s a great substitution for eggs in desserts and baked goods especially. This mousse is so luscious and creamy, you would never believe that it started as a can of beans!
