Frozen Mango Margarita

In this week’s episode of “Eitan’s OUtdoor Summer Cookout”, I’m in the kitchen with my comedian friend Leah Forster whipping up this insane Frozen Mango Margarita! Leah is a hilarious comedian and an all around fun person to be around. We had a blast cooking and laughing together on and off camera.

When brainstorming recipe ideas for this new show, I knew I had to make the ULTIMATE summer drink! There is nothing that feels more like summer to me than sipping on an ice-cold mixed drink in the sun. Most drink recipes out there have alcohol in them but it’s actually very easy to make delicious non-alcoholic drinks at home! This Frozen Mango Margarita is just that. It’s incredibly easy to make, jampacked with flavor, and super refreshing.

Frozen Mango Margarita

Ingredients

  • 4 cups frozen mango chunks
  • 1 cup ice cubes
  • 1 ½ cups fresh orange juice
  • 4 limes, juice
  • 2 tablespoons agave nectar, plus more for the rim of the glass
  • 1 tablespoon honey
  • Chili-lime seasoning (Tajin)
  • ¼ cup fresh mint

Instructions

  1. Place the frozen mango, ice cubes, orange juice, lime juice, agave nectar, and honey into a large blender. Blend until smooth and no chunks remain.
  2. To coat the rim of the glass. Add chili lime seasoning to a plate and the extra agave nectar to a shallow bowl. Dip the rim of each margarita glass into the agave nectar then the chili-lime seasoning. Pour the mango margarita into the glass and garnish with a lime wedge and sprig of mint. Serve immediately.

Instagram post 2191609429068988343_258777401 Today, I'm finally ready to share something with you guys I have been going through because I think it may be able to help some of you going through something similar. A few months ago, I realized I was becoming a person I wouldn't want to be friends with. At the time, I had just received a barrage of bad news about my career, and it felt like everything was going downhill. Because of how passionate and invested I am in my career, I let it get to me and change my overall personality and who I was off-camera. Many days I would sulk in my room at night about my situation, then force on a smile and muster up excitement for that day's Instagram stories. Most of the time, I was sad for myself, and that was apparent in how I talked with my friends and family; I was always complaining.

Eventually, I realized what I was becoming. I knew it was time to step back and figure things out to fix my mentality. I did some soul searching to find my true priorities and changed my perspective on life and my career. Many of the things that once seemed the end of the world to me were insignificant, once my perspective shifted. I had newly refined goals and knew what I wanted to be creating. I began regaining my hustle that I'd lost a few months prior.

Now I am proud to say that I am as motivated as ever, and business is booming! I have a clear vision of my priorities, and with my new perspective have reduced the stress I put on myself about my career. Although I am the same Eitan on and off camera, I'm able now to separate the success of "Chef Eitan" from the happiness of myself in my daily life. It was not always that way, and numbers can get to your head, so making that distinction, I have found, is very important to staying sane. I have made friends time a bigger priority. I now say no to things that are not working towards my goals to have more time to spend with friends and family.  I'm working on some incredibly cool projects for 2020 and have been getting more amazing opportunities than I can even handle at once. I'm overall happier and consider myself a more enjoyable person to be around... (continued in comments)
