Seed & Mill

Seed & Mill

This summer I attended ICC’s Teen Camp for the second time. Last year I took the Culinary Class and this year I ventured into the world of baking and pastries in their 5 Day Pastry Class. One of my days there my mom and I went to Chelsea Market after camp. (Being there brought tons of memories back from the day we filmed Chopped.) We came to check out a cool shop called Seed & Mill. They’re selling high-quality tahini and halavah.

Seed & Mill was opened by three friends, Lisa Mendelson, Rachel Simons and Monica Molenaar.  They all shared a love of food, adventure, travel and healthy eating. In the Middle East (where Lisa grew up), tahini and halva are staple ingredients found in every kitchen pantry. Lisa found it hard to find the same quality products she was used to. She saw  this as an opportunity to introduce US customers to a much better tasting – and fresher –  product.
Tahini and halva have existed for thousands of years, but they were determined to do something a bit different and essentially breathe new life into these products.  They did this by creating cool and unexpected halva flavors and by opening people’s eyes to the incredible versatility of tahini as a cooking ingredient.

They have over 25 unique flavors of Halava. They have everything from chia seed to matcha to chili chocolate or salted caramel. The list of delicious flavors just goes on and on. You can find a list of all the flavors -> here <

Rachel gave me a platter to try of some of their best-selling flavors. I tried the caramel flavor which was super sweet, creamy and buttery. I also tried other yummy flavors like Peanut Butter, Pistachio, Chocolate Swirl, and Sea Salt Dark Coco. The pistachio one was awesome. It was for all of you pistachio addicts out there. The halava with the crunchy pistachios was just so yummy. My mouth is watering just writing about it now.

I also had the pleasure of trying the goat milk tahini ice cream. I was intrigued by it because I had never had goats milk before. The ice cream topped with freshly ground tahini and the Chocolate Swirl Halava was unbelievable! It was so creamy and rich. The contrast of the sweet ice cream and halava with the savory tahini was just divine. I would eat 100 cones of it if I had enough room in my stomach!

I had so much fun tasting the yummy food at Seed & Mill. I wanted to give away some of their halva to one of you lucky winners. So I will be giving away a sample box of 1lb of halava. You can go and pick any of the 4 flavors that you would like. Even if you don’t win, I highly suggest you go check them out. If you do go, post a picture and tag me @chefeitanbernath and tell which which flavors you got. I had so much fun hanging out at Seed & Mill! I can’t wait to come by again!

Believe it or not, you can take the liquid from a Believe it or not, you can take the liquid from a can of chickpeas and turn it into a delicious, rich, silky-smooth chocolate mousse. That is exactly what I am doing in my brand new video on YouTube.com/EITAN! (LINK IN BIO) It only takes two other simple ingredients that you probably already have in your pantry: chocolate and sugar.

The liquid from a can of chickpeas is called aquafaba, and it’s nothing more than the water the beans are boiled in before they’re canned. The chickpeas infuse that water with properties that are very similar to egg whites, and it’s a great substitution for eggs in desserts and baked goods especially. This mousse is so luscious and creamy, you would never believe that it started as a can of beans!
