Today I am sharing a recipe from the newest cookbook I have added to my collection. The recipe is called “Party-Trick Peanut Butter Cake” from Molly on the Range by Molly Yeh. I have been looking forward to this post for so long and am pumped it is finally time to share it with you. Just in case you are living under a rock and never heard of Molly Yeh before, and by the way it’s pronounced “yay” not “yeah”, I am honored to introduce her to you.
Molly is a mega food blogger who recently moved from Brooklyn to a farm on the North Dakota-Minnesota border, where her husband, aka “eggboy”, is a fifth-generation farmer. Though a Juilliard-trained classical percussionist, Molly found herself with lots of free time on the farm for other interests. So she started her blog and has had incredible success. Molly’s blog “MyNameIsYeh.com” has landed her on Forbes 2017, “30 under 30”, Savuer’s “2015 Blog of the Year” and also Yahoo’s “2014 Blogger of the Year”. Her success is truly inspiring. I can only wish to so far in the industry. Molly’s cooking is inspired both by her Jewish and Asian roots and her new life on the farm. Molly is famous not only for her unique recipes but her unique food photography style.
Let me start by telling you how I got this awesome book. Back in May, I was working at an event on Long Island with, well-known Food Network Star and now my friend, Justin Warner. It was a fancy dinner for the top forty donors to an Israeli charity. Justin was hired to cater the event and he asked me to help as a sous-chef. What an incredible honor. It was an amazing experience and yes- the food was incredible! He is so talented.
So, I had stayed the night before at my good friend Melinda Strauss’s house, of Kitchen-Tested.com. Melinda did a bunch of Instagram stories of Justin and I cooking. Since one of the recipes happened to have been adapted from Molly’s book, Melinda tagged Molly in a story. A few hours later I looked at my phone and there was a notification that Molly had started following me! I had been a huge fan of Molly for a long time so I kind of freaked out, to be honest. I messaged her and she offered to send me a copy of her book. I got it in the mail and spend an entire weekend reading through the whole thing. I love it!
I have officially added this book to my top five favorite cookbooks. Let’s start out with how amazing the recipes look and sound. I really admire how Molly has created her own unique style of food photography that is just gorgeous. Plus her recipes are insanely mouthwatering! I’ll list off a few: “Cardamom Orange Kubaneh”, “Cauliflower Shawarma Tacos”, “Hummus with Meat All Over It”, and “Za’atar Monkey Bread with Garlic and Onion Labneh”. You’d be lying if you said your mouth wasn’t watering right now! Here is a link so you can buy the book asap! Additionally, the stories she tells before each recipe are interesting, extremely well written, and honestly hysterical. I seriously was inspired to improve my own food writing after reading it. So thank you, Molly!
When reading through the book the recipe that immediately made me hungry at first sight was the “Party-Trick Peanut Butter Cake”. I am a huge fan of peanut butter but as my followers know I am not a big baker nor do I really like cake. But it seemed easy enough and I figured if anyone could get me to love a cake it would be Molly. I was 100% right! This cake was the easiest thing ever to make and was heavenly!
Best of all was that after I was done with my photoshoot family friends from Israel made a surprise visit to our house. We knew they were in the area but had no idea that would be stopping by. Luckily them because I walked downstairs with the cake in hand and had an amazing dessert to feed them. What was to be a quick visit turned into an instant celebration. So thank you, Molly! Overall, this is an amazing cookbook that you have got to add to your collection! Either run to your nearest bookstore or buy it from Amazon here. I can assure you that it is a cookbook that you will not only love cooking from but a book you will read through many times like I did. - 1 cup sugar
- 1 cup flour
- ¾ teaspoon kosher salt
- ¾ teaspoon baking powder
- ¾ teaspoon baking soda
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup buttermilk
- ¼ cup flavorless oil
- 6 tablespoons water
- ½ cup creamy unsalted, unsweetened peanut butter
- Powdered sugar, whipped cream, or yogurt, and.or fresh berries, for serving
- Preheat the oven to 350 degrees fahrenheit. Grease an 8 x 8-inch baking dish and line the bottom with parchment.
- In a large bowl, whisk together the sugar, flour, salt, baking powder, baking soda. In a medium bowl or large measuring cup, whisk together the egg, vanilla, buttermilk, oil, water, and peanut butter. Add in the wet ingredients to the dry ingredients and stir to combine. Pour into the baking dish.
- Bake until a toothpick inserted into the center comes out clean. Begin checking for doneness at 30 minutes.
- Cool in the pan for 10 minutes. Remove to a rack to cool completely, or serve while it’s still warm. Serve plain or with desired toppings.
